Danish Butter Cookies @ TOO MANY RECIPES





I'm finally backkk :DD 
Finally survived through mid year exam~
Soooooooo
I'm craving for butter cookies and especially those in blue tins sell in markets are my favourites! 
Everytime i'm so excited when i saw there are blue tin cookies at home but only then i realised there are no cookies but threads and needles TT
There are so many recipes online and i hope i can just try all of them ! But i selected some of the famous ones to try :)

His recipe is recommended by many bloggers!
I will categorise this under 'crunchy' type of cookies.
I halved the recipe and recommend you to increase from 65g of icing sugar to 75g, as it's pretty tasteless to me if there is insufficient sugar.
NOTE: Pls pls use good quality butter like Lurpak as it really affects the cookies a lot  

As you can see from the photos, the cookies are not evenly baked as the top are pale.

Japanese Souffle Cheesecake (Cupcakes)


I need to clear 3 packages of cream cheese in my refrigerator as they are expiring soon.
Since i have never tried baking cheesecake before, now it's the time hehe
I wanted to bake a whole , round cheesecake actually but i need to bring them to school for my friends so i thought cupcakes are much more convenient.
There are two types of cheesecakes, one is new york style cheesecake which is very dense, very cheesy and often have biscuit crusts at the bottom.
The other type is Japanese cheesecake, which is very light and fluffy. But you can still taste the cream cheese in it.
Both are my favourite, but i am baking Japanese Souffle Cheesecake this time.

After much much research, I decided to use Corner Cafe's Souffle Cheesecake Cups.

Simple egg tart recipe


Hong Kong style eggtart is always one of my favourite chinese pastries. ( I like portuguese egg tart too lah ). 
What triggers me to bake this is actually my mum's friend, Aunty Sylvia, bakes eggtart for us and it's super nice! So i got the recipe from her hehe
Her recipe is rather simple and uses only basic ingredients like flour, egg, sugar. What you need to buy additionally is evaporated milk

Egg Tart Recipe 
makes 20

Tart Ingredients
250gram Plain Flour
120gram salted butter (room temperature)
55gram icing sugar
1 egg
1tsp vanilla essence
Direction : Whisk egg and sugar until incorporated then add vanilla essence. Slowly mix butter and then flour. Avoid kneading dough.
When you think the dough is ready, cover it with fresh wrap (保鲜纸) and put it in fridge. At least 20mins, can put over 1 night.

Filling ingredients
100gram sugar
300ml water
4 eggs
80m evaporated milk ( 淡奶)
Direction : Boil 300ml water and slowly add sugar until fully dissolved. Cool the sugar water to room temperature then slowly add the 4 eggs, mix evenly, and then the evaporated milk. 
* Note that the eggs are best to be beaten fully &
the sugar water is important to be at room temperature, you dont want scrambled egg :P

If you are ready to bake, just take the dough out of the fridge and then fill the filling. Bake at 200 degree celcius , about 15-20mins.

Funfetti Cupcakes

What do we do when it's public holiday? 
Bake bake bake of course hehe
So this time Faith , my neighbour + classmate, and i decided to bake Funfetti cupcakes!!
HMMM recipe searching again, and so we chose RachellTan's recipe! There's also video uploaded on both her youtube channel and website.
What are funfetti cupcakes? To me, they are basically vanilla cupcakes with colourful sprinkles and i love vanilla cupcakes hehe
When we are on our way to nearby market to buy butter, we saw a xiao shuai ge. He keep looking at us with his innocent look omg I cant help but sneakily take a photo of him ><

Back to the point, so now we have all the ingredients, let's get started!

After creaming butter and sugar until fluffy, slowly add an egg one at a time...I guess you know the steps by looking at the recipe so not being naggy here ><lll

This is how our batter looks like.We spammed a lot of sprinkles but doesnt look so after we mixed them O_O The batter is a bit thick as compared to rachel's one. Guess it's either we added too much flour or overmixed.
